Cutting-edge chef, owner of DiverXo, with three Michelin stars
David Muñoz is the most groundbreaking cutting-edge Spanish chef, not only because of his creativity in the kitchen and his ability to combine different types of cuisine, but also because of his rebellious, iconoclastic personality. He has transferred that to the style of his restaurant DiverXo, which has three Michelin stars and where risk-taking is always an ingredient on the menu.
He is often heard speaking of sacrifice, excitement, madness, dreams, an infinite desire to constantly surprise diners, to do things that have so far never been seen... In his talks he gives his view on creativity, leadership and entrepreneurial initiative. All of that without setting aside his challenging spirit and his eagerness to find new things, such as what he offered at Madrid Fusión 2015, where he sparked controversy when breaking the taboos of the wine and cocktail world.
He opened DiverXo in 2007. It was a small restaurant in Madrid’s Tetúan neighborhood. In 2008 he was named Best New Chef at Madrid Fusión and in 2009 moved DiverXo to a larger premises. The Michelin guide awarded him his first star in 2009 and a second in 2011. Then on November 20 2013, at only 33 years old, he received his third Michelin star.
At the premises where DiverXo went from being a fashionable restaurant to a culinary benchmark, the daring and innovative nature of the concept made it unprofitable so David Muñoz eventually moved the establishment to the NH Collection Eurobuilding hotel where he at last had a spacious premises that was equipped for his daring approach. For his second restaurant, StreetXo, located in the Espacio Gourmet (gourmet section) of the department store El Corte Ingles, he opted for a more affordable street food concept: StreetXo.
In 2016 he launched his own television program, a docu-reality called El xef, which shows how StreetXo is going international, with the opening of an outpost of the restaurant in London.
